Chop them up, coat them in melted tallow (or ghee) salt then with rock salt, ground cinnamon, and brown sugar. 
Pop them in the oven on parchment paper at 425 for 20-40 mins (depends on how you like them) 
Then take them out, drizzle with maple syrup.
