Something to know, is that Apple won't likely "open" the phone. They don't need to. Apple most of the time can't break their own secure enclave for getting into a device this way, without extensive efforts, but just like every other incident where they get asked by governments to pull data from a phone, they usually just restore an icloud backup, which they can access in any way they please because it is on their own device they can control. You can have an Apple device, just turn off everything cloud related and don't set it up to auto connect to other devices.
