 Those crispy black spots look amaaazing. What dough recipe you using? I’ve been using https://medium.com/@recipezenith/vito-iacopelli-pizza-dough-recipe-poolish-69e0b949b63e but I keep having to use about 65% hydration or it gets too sticky. Maybe I need more practice! 
 It was a class at Eataly, its the first time im making pizza dough 🤷🏽‍♀️
