 Last night during @Companions Corner I made my first attempt at hot honey!

It will probably ferment some, so I gave it lots of headspace to bubble up. 

IIRC, thanks to @Filou for telling me rough proportions by weight of honey:other stuff.

This is a pound of unheated, unsprayed Virginia dandelion honey combined with ~2.5 oz mixed garlic and shallots (I cut garlic ends off after weighing and replaced a guess at that mass with 1/8 tsp organic cumin seeds), 0.05 oz mixed mint and thyme from my friend’s garden, and 2.45 oz mixed organic shishito and serrano peppers (as non-green as I could find). 

Smells amazing 🤤

 Awesome! Give it about two weeks to ferment if you can wait. It's really hard to resist the temptation to taste it along the way of course, but you will definitely taste and smell the difference even after just a few days. Enjoy!
