 Started a new tradition with my siblings this year where we each pick four travel destinations, draw one out of a jar and go.

 Crete and Santorini. You will need like a week for Crete. Rent a car and go everywhere, especially including the less and non touristic sides, farm taverns, remote beaches, etc.
