Store bought kombucha has to have a Shelf life and still contain less than 0.5% alcohol. To achieve this they have to ferment it until there is no sugar left making it quite sour. Real Kombucha has about 1-2% alcohol and about 2-3% sugar. This creates a nice balance of sweet, dry and acidic.
