Agreed that Start9 docs are second to none. Also, their Telegram channel has excellent support from their team. 
My suggestion is to start with a few core services and start to build your way up slowly.... Self hosting is a long transition and requires making a lot of changes and figuring out what your needs and capabilities are. Not everyone is the same. Give yourself the time to consolidate news habits and shift your expectations. It's a very enjoyable challenge.
