I need to upgrade my car to something more suitable for a family of 4, I struggle with space so much. Here's my requirements:
* Can comfortably fit 3 baby seats in the back
* As a shiy ton of so luggage space, those summer trips are starting to be an impossible packaging challenge
* Manual
* Gasoline
* Has basic ultrasound parking beeps
* Not "smart", i.e. does not spy on me, works offline
* Available in the EU
* Optional: can support carrying bikes

No later than 2014 to avoid the spyware gulag. You can of course find the right shop to disable gulag tech from your car. Probably simpler to not have it in the firstplace.

Definitely not a hard and fast rule for 2014, GM vehicles had On-Star in like 2004 I think, but they ran on 3g I think so most are inoperable now. I can't speak for ANY vehicles outside the US.
If your looking for a spyware free vehicle, you probably shouldn't consider anything newer. I believe most European countries have also mandated full "tracking" even always-on cameras. In the US they are requiring vehicles mad after 2025? (I think) to have in-car cameras capable of knowing if you are too impaired to drive and lock you out.
Pre 2004 wagon is all I can think of for you.
Think '04 Volkswagen Passat wagon. Maybe find a diesel one too if available. Affordable; ~$4,500 USD here stateside.

Yes 530l space, it's bigger then the A4 and you can get the 3l (260+ hp) engine up to 2015 facelift for a reasonable price, the diesel can easy do up to 300.000 km

Idk if they come in manual... Probably not and that's severly limiting your options for almost no gain.
