Made one of my favorite "vegan on a budget" dishes last night (I'm not vegan, but I don't eat a lot of meat). I cooked up a tomato-based sauce -- heated up olive oil, sauteed an onion, a couple cloves of garlic, and mushrooms, then added a couple of cans of tomatoes (fresh can work as well), a can of tomato paste, a smidgen of sugar, salt and pepper, and lots of fresh and dried savory herbs (rosemary, basil, thyme, oregano). Then I added chopped yellow squash and zucchini, sliced black olives -- and chickpeas as the protein! I served it over brown rice pasta since I can't do gluten. My partner added parmesan cheese, which then made it not vegan. Chickpeas are so versatile! We'll have to make a falafel meal soon. #VeganRecipes #Chickpeas #VeganOnABudget
