 You can choose to send to only that relay, and then only those who have read permissions from that relay will be able to view it, but there is currently no way to prevent them from rebroadcasting out to other relays that I am aware of.

 #Amethyst would be the best client I know of for on-the-fly relay selection on a per-post basis.

I've been thinking wanting a client that allows relay selection on notes for months and I didn't know I've been using one all along!
