 Those Thai markets are the best. 
 Totally agree with you 💯.  This market is in the Philippines though. I am making Thai Somtam as I am having a craving for Thai food since leaving there a couple of months ago.   Sawadee krap 🙏 
 love the local harvest - somtam is the mango salad ?  
 There are many Thai dishes made with mango. However, Somtam is made with grated papaya.  I can share my recipe ingredients with you here:

The ingredients for som tam, a Thai papaya salad, typically include:
Green papaya: The main ingredient, but cucumber can be used as a substitute 
 
Peanuts: Toasted and sprinkled on top 
 
Palm sugar: Pounded into a paste to dissolve more easily 
 
Lime juice: A key ingredient in the dressing 
 
Fish sauce: A key ingredient in the dressing 
 
Garlic and chilies: Coarsely pounded together with a pestle and mortar 
 
Other ingredients that might be added include:
Snake beans, Pineapple, Tomato wedges, Iceberg lettuce, Dried shrimp, Tamarind juice, and Palm vinegar.


Pam, usually I like to make mine with an added salty egg mixed in ,but there are so many ways to make it.  Give it a go , it's fun and easy...   Enjoy 
 i think i have all the ingredients in my kitchen - except for palm vinegar, never heard of it. And somehow never got the hang of salted egg. But would definitely give it a try. Thanks for sharing!

Palm sugar is a sweetener derived from any variety of palm tree. Palm sugar is sometimes qualified by the type of palm, as in coconut palm sugar.   You could substitute it with brown sugar.  

 The marble mortar and pestle are made her on the island.  I love using them.
