the left is milk raw, aged 5 months this will yield a rich flavor with less of a tangy bite. the right side is aged 12 months, I don't doubt the quality but this long of an age will produce a more sharp pronounced tangy flavor, perhaps that's why it comes with suggested sweet pairings suggestions like apricot and honey. #foodstr
