this seems like the same process for curing cannabis, you just need to get them at ideal dryness and seal them and keep them in the dark so the chlorophyll is auto-digested, because that's the main thing that causes the hot/bitter

What temperature are you keeping them at?
Loosely controlled low to mid 60s F. It's the only space I've got for this.
