Hypothetically, What if one has a house fire/flood, and loses their bitkey & phone simultaneously? Can the wallet be recovered?

Other multisigs combat this with fireproof seed backups.
Yup. You can see more details on the various recovery scenarios in our whitepaper

What I would like is be able to move all my funds if I loose my bitkey device and don't want to replace it soon.
Maybe a whitelisted bitcoin address where I could send the funds if no bitkey device is available.
Other thing: I think bitkey app should start as a lightning wallet, and if the user have a bitkey device, he could enable and disable to see the full onchain balance. Why? If someone kidnap me today, this someone could see my full balance.
If Bitkey starts as a lightning wallet and only show full balance of onchain multisig, if the user enable it with bitkey device, the someone who kidnap me, will never know my full balance, only the lightning balance.
 * If the user doesn't enable to see the full balance with bitkey device..
