99% of people will either run lightning through a custodian, or with some “node on the phone + LSP” wallet.
I’d like to know what more information WOS is getting vs what ACINQ (Phoenix) is getting, because I think it’s very similar (or even worse in the case of ACINQ if you try to open direct channels)

 The current version of Phoenix offers no advantage regarding privacy over existing, hosted, custodial wallets. We (ACINQ) know the final destination and amount of payments. 
 What difference are they between Acinq phoenix and a CBDC system ? 
 CBDCs will replace all fiat eventually, cash included.
Unless your grocery stores accepts Bitcoin, you won’t have any other option than having zero privacy when spending your fiat. 
Meanwhile, if you’re unhappy with Acinq/Phoenix privacy policy, or for any other reason, you can choose to use any other of the dozen lightning wallets available, or you can always choose to run your own node and watchtowers for maximum privacy. 
 For maximum privacy you should run your own Monero node over tor or i2p.

If you think your Bitcoin setup comes close to this I can guarantee you that you will get rekt in the future. 
 
CBDC are not here yet. And there a pretty few people who are aware of bitcoin, and even less use it. 

Stores can accept other curency, they are a lot of useful currency that respect privacy.
