This is 14 cups of cooked keiffer pears. It's a fairly grainy pear, but real nice flavor. Cooked, it tastes like there's vanilla in there in with a great pear flavor.
We're making pear butter with inspiration from a recipe I found online. Ours will be the 14 cups of cooked pear puree, 1 1/2 cup of sucanat, 2 tsp dried orange peel, and 1/2 cup of orange juice.

 Fermentation is pretty hard on delicate flavors. It might stay or could be added back. Maybe soak some oak chips in vanilla then add the vanilla?
