 First attempt at making a #keto #bread!

Flax, almond flour, eggs, bit of greek yogurt, olive oil.

Trying to refine my approach to keto: reduce my saturated fat intake and lower my cholesterol levels (yes, I read Lopp's article and yes I got the advanced lipid panel test). Incorporating flax seeds seems like an easy win.

Tastes mostly neutral, but finishes as salty olive oil. Not bad, but not great.

I've been putting slices in the toaster to crisp up the mushier inside. That def improves the experience.

Spreading some butter on was a bad call; accentuated the saltiness in a bad way.

Tried it with some pesto; if you have a pesto you really like, it could work great. My pesto was so-so, so meh.

Biggest success: dip it into a tikka masala sauce!

For the next batch I'll try to make it a more savory herb (rosemary, oregano, black pepper) bread, less salt, less oil, and swap some oil for butter.
