 A distant relation on my mum’s side has a wanton noodle stall in Singapore in the Michelin Bib Gourmand. Singapore style wanton noodles are distinct from KL / Perak style (black sauce, pork lard) and from HK style (either soupy, or dry but tossed in shrimp roe). It’s just.. plainer, but also comforting in its own way

My American English kept interpreting this as wanton (reckless) and all I could think about was how delightful noodles with no care in the world and nothing to lose must be. ☺️
