I actually never went down the mastadon route, but my understanding is that the admin could just say - we don't like your opinion bye bye - and you'd lose essentially your social graph on that server. Is that right? 

 You are correct on both statements. Only problem is that Syncing data TO/FROM ditto don't seem to work at all right now

 All of that. The only thing that you won't be able to do easily is  your uploads unless your ditto instance uses Blossom for the media storage
