 Something to do with extraction related to surface area. I gave up on coffee nerdig a while ago and just sned it with a filter coffee machine now.  
 that was my guess. surface area, and/or tastes seem stronger when the weather turns cooler. 
 Everything effects everything, temperature differential might have an impact on flavor. Hot water hitting a colder bean. 🤷🏻‍♂️ I don’t nerd out on coffee but i do play around with all the parameters. The problem is I never do the same thing twice unless I am using a machine.
