Great post. I went 'ketovore' for five months this fall. It completely reset my eating hormones (hungry, stop now, etc.). I do believe that eating pure carnivore is possible and healthy if done right, but my body was seriously craving carbs. So I've brought in some basics: rice, bananas, occasional sourdough. I make sure to eat tons of protein and fat so I don't overeat carbs and it's been working. Less plant and fruit fiber. I definitely lose weight if I keep carbs to one serving a day. Balancing act, but resetting glucose loads and eliminating all sugars was a huge component.
Yeah, I think just cutting out carbs will do the trick. I went on a keto diet before, this is not my first time. At that time I lost a lot of weight. The problem was that I wasn't eating enough meat and did not get enough calories or protein or fat even. It was basically starvation.. and that can't last long term. I bounced back to my old self, back to weighing even more. I think carnivore with plenty of fatty meats fixes a lot of that. It keeps the carb cravings in check.
