 I use them to make a unique risotto!  I may have posted it before, I’ll look for it when I have time to spare. 

If you wish to remove some of the gassy effects, try pickling, I hear. 
But I don’t always have them pickled, I just have them in small enough quantities there’s no noticeable effect, I think. 
 Oh fun! I love risotto and I love pickled stuff.
