 When I lived in South Florida, I went to a Jamaican restaurant that served curried goat.  It was quite good, but it had shards of bone mixed in with the meat.  I always imagined someone in the back beating a goat with a sledgehammer to soften and break up the bones.  I don't know how the shards of bone were made. 
 most likely with a bandsaw... certainly the guy around the corner who does the goat butchering stuff is prone to being quite lazy about how he cuts it, certainly no proper cuts lol

still have a bunch of it in the freezer that i'll probably manage to get through before it's too old

this whole thing of shards of bone is a disturbing trend in recent years in general... very often find it in mince nowadays... seems like they don't have professional butchers anymore, this really makes the coarse meaning of "butcher" out of it
