 Harvested some sunchokes today. Anyone have any good recipes?

 Oven roasted, oiled, salt and pepper and garlic aioli 
 Any tricks on cleaning them? 
 I just run em under water and maybe eat a little dirt 
 I've used the edge of a spoon to peel them kind of like ginger depending on how thick the skin is.  But you can also leave the skin on. 
 We haven’t had a frost yet so haven’t harvested any. I did read that you can boil, peel the skin off, and au gratin like potatoes. 
 ‘Artist as family’ on YouTube had a recipe for them. Never tried it, I know they’re prone to give you flatulence if you aren’t careful
