You can back date them, but you can't prove you didn't back date them. This is a building block for NIP-41 (identity rotation), for when you have your nsec compromised.

Yeah, that's just because of the opentimestamp calendars, they are slow, probably because of the current fee environment. To be clear, the timestamping is sent immediately to the calendar, but the OTS batches them and takes a while.
