 I agree with this. Gnocchi is such a simple recepy but because of that is so complicated to make the perfect texture.. a lot of things influences, not only quantities, as the kind of flour, the water temperature, how you mix it and for how long.. also the potatoes.. I mean, a lot  is there.

 When gnocchi are made well, they're light, almost fluffy. Delicious. 
Made poorly, they can be pretty bad! 

 Pretty sure your supposed to boil them before eating 😁 

 Gotta recommend letting the potatoes steam off first for a while before mashing and then refridge over night.  Getting the moisture out allows for using less flour and makes them much better. 

 Unless your friend's Mom makes it and cooks it right then, and she happens to be from Italy.. Them erasers are delicious.  

 Eat it in Italy and you will erase this post.
