Cold Storage is a wallet that is not connected to the Internet where only you control the keys to it. No company, government or centralized body can move your coins, only you. Cold Storage is usually set up with a hardware wallet which is a little device that generates your seed phrase ( the seed phrase's purpose is to recover your coins if the hardware wallet becomes damaged or stolen ) and you use that hardware wallet device to sign/send transactions and to generate wallet addresses for you to receive your crypto. This is the only way to ensure that your coins are actually yours, the numbers on your screen where you hold your coins with a company may go up and be usable but that doesn't ensure all of your coins are actually there. This also comes with a lot of responsibilities such as keeping your seed phrase secure and off the Internet, because as soon as someone sees your entire seed phrase and recovers it in another wallet then all of your coins are gone and have been stolen by the person who saw your seed phrase.
