Is there a way to hotspot my unlimited data from my work tablet to my whole home network?    Experiencing a fibre optic outage here for the next 48 hours...

 I mean wifi hotspot from the tablet and then connect your home devices to it. The tablet would play the role of the temporary router+modem

Majority of my infrastructure is ethernet. Cat 6

 I see. You could do a wifi to ethernet bridge. If your tablet supports it

 Pretty sure you can do usbc to Ethernet if you have a droid? 
 Yes isn't it only Ethernet to USBC, not the other way around?

 Short answer? Yes. Long answer? You might use up a good chunk of that 48 hours learning about setting up a gateway using a *nix system. But basically, connect your linux/bsd (pfsense is probably the best option) to your hotspot, connect your wired ethernet card to your existing home switch (or wifi access point -- most likely it's an all in one anyway), and throw a few lines of code in to manage the routing.
