Relays broadcast data - all the notes we post
they also hold those notes so if you go from one client to another if the relays arent the same it will look like you are missing some stuff. its best to match the lists.
if you delete relays it will do the same.
i dont use communities but it looks like it adds a topic to your home feed.
many of us use hashtags. and the people here use 'str' on the end of them. so if you are looking for people that like books instead of #books try #bookstr.

Your relay list looks good. Remember the more relays you have the more power it takes if you are on mobile. Lots of relays can drain a battery fast. here is a way to track relays https://nostr.watch/relays/find
to add them each client will have a place in the settings to add a relay so you just copy the wss and hit join
Topic specific relays are getting popular now but they are usually paid relays for the purpose of filtering spam or nsfw content.
To see if a relay is working for you try using https://nostrudel.ninja/#/
you will notice it shows if the relay worked when you send a note. If you are to far from a relay the client might time it out. and some go on and off through the course of the day.
I would say dont mess with them to much. But i would add
wss://relay.mostr.pub/ this is a bridge to the fediverse. you will see users from there but if you dont have this relay you cant interact with them https://soapbox.pub/blog/mostr-fediverse-nostr-bridge/
