 Yes, that's how channels work: Imagine a string with pearls on it. As you push some of your pearls towards your partner he now has some pearls he can push back to you.

 After I opened this channel to Olympus and sent a couple of payments, I tried sending 100 sats back to myself using Alby wallet. I had to pay a 10,000 sat fee to send the 100 sats to my Zeus wallet (I assume this fee is how Olympus makes money as an LSP?).

It looks like this 100 sat receive caused Olympus to open a second 100,000 sat channel with my Zeus wallet instead of just sending the 100 sats back across the channel I had just created.

I could have sworn I read somewhere that you shouldn't open channels smaller than 1 million sats due to on-chain fees?

 that is correct. I got all of my inbound because I like to buy stuff. it's quite great.
