 I would infuse the bsde spirit and/or make a syrup with eggplant 🍆.  We can use peanut butter whiskey for sure 🤌. 
The eggplant would add a vegetal note to the recipe and should be used as a garnish somehow. I'm on it. 
Assuming this will be showcased at Nostrville 24' ?

 It will be good. Just have to pick a classic recipe and throw a riff on it.

 Maybe if you slice it and dehydrate it, salt and spice it 
 Very possible.  Longer shelf life.  I have access to a dehydrator
