 Those spirals are so fuckin' annoying.  My grandfather would deal with them by smashing old tomato cans and laying them on top to spread the heat out more evenly.  He was a fuckin' genius and I miss him.  I wish he could have seen what I'm up to today.

When my mom bought a tagine, we also got a thick copper diffuser plate to use it on the stove. I guess it’s the same concept, just a little fancier.

 Primarily that I’m a father. His grandson looks a lot more like he belongs to the family than I did (thanks dad). I respect my son’s future opsec but suffice it to say he was given a very Sicilian name and has dark hair and features like my mom’s side of the family. I think he’d be interested in bitcoin (he was a stockbroker and hard money guy and energy guy). Also he’d know I didn’t fuck up when I was so often so close to that line. He knew me in law school but got too ill to ever see me practice or hear about
