Since water and flour are the two ingredients that you have the most control over, they're the most important to maintain. Changing them will change the behavior of your independent variable: the bacterias and wild yeasts that do the work. (Also temperature and sunlight)

It is an organism so it needs regular care and feeding, you can suspend that for a few days to a week in the fridge but longer than that and your magical bread goo will turn into a science experiment.
