I have tried to understand but I don't ... I think it is rooted in the word. Peste is the Spanish word for stinky and it is all I can think of as I eat it. Outside of that I find the texture troubling
Well.. Well.. You’re not supposed to eat it directly. And I hope I’m not insulting someone important, but if there is a texture, it’s not done right.
I've had it on pizzas and sandwiches and many people with better palettes than mine swear by it. I think it is definitely a trauma of some kind but all I can think of is the word root and that the first time I tried it I was probably in my 20s

Pesto is supposed to be a flavor paste. The same concept as seasoning salt, but for wet substances. herb, cheese, nut, roasted garlic, oil. All ready for addition as a flavor explosion 💥
