They might know you sent it to a swap service address and that you swapped for Monero if they collude with SimpleSwap, but they wont be able to trace what happened after as long as you stay in Monero and spend it directly

If you want to later go Monero -> BTC (or another crypto) use Bisq, Haveno-Reto, Robosats, or BasicSwapDEX. Don't swap it all back in one shot (break into different amounts) and don't use SimpleSwap again for this.
