The trend is constant spying and surveillance. Unfortunately (not in this community) most people don't care about their privacy until it is violated. People want the convenience without understanding the cost in terms of freedom. 

By using an OS like GrapheneOS, and a faraday bag, with phone and service paid privately, you will still get spied on, but the information serves no one. By using standalone GPS unit, and not connecting your cell phone to your vehicle, there will be minimal information sent, see above. With properly sandboxed accounts, and single purpose login/password combinations, information cannot serve anyone. 

I agree these might be too technical for the average user, but it is certainly possible.

In the physical world, spying will continue to be more pervasive as it is just going to get implemented in the name of "your protection." In Europe, worldcoin was immediately received by millions. The Federal Reserve will likely create the CBDC and call it something else.

The only way is awareness, vigilance, and patience as these things take time to change.
