When we breathe we don’t simply “convert” oxygen to co2 (that would be alchemy). Our blood flows in tiny capillaries right along the inner surface of the lungs where the carbon in the blood from our recent food metabolism is replaced due to hemoglobin’s strong affinity for oxygen
