Sourdough advice: don't do like me, keep a backup. Either in a cup in the fridge (lasts weeks to months), or dehydrated (lasts forever). This way, if you lose your main culture, you can quickly resuscitate it. I had a lot of work recently and no time to properly take care of mine, which got mold: there is no coming back from this :( I started a new one but I will be now a few weeks without bread :'( #sourdough #bread
