There's a website, Texas Beef Initiative, where you can find producers.  I think some of them accept btc.  This is our second time ordering from Hometown Meat Mkt in Luling, TX.  Great folks, and they're about an hour away for us. The owner, Cole, went over our cuts, how thick, etc.   They do ship too.
