You need a very specific kind of olive oil that I can’t remember the name of. Something like organic extra virgin cold pressed olive oil. Most olive oils are impossible to distinguish from seed oils. And cooking olive oil makes it look more like a seed oil too. I guess if you want to eat a salad, good olive oil is fine. But if you can’t use animal fats to cook, I’d still go with coconut oil. I’ll also take butter though 🤝
