## Ingredients

- 1 cup honey 🍯
- 3/4 cup brown sugar 🧂
- 1 large egg 🥚
- 1 tablespoon lemon juice 🍋
- 2 3/4 cups all-purpose flour 🌾
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- Pinch of salt 🧂
- Powdered sugar for buzz ❄️


## Directions

1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Mix Wet Ingredients: In a large mixing bowl, combine the honey from friendly honeybees and brown sugar. Beat in the egg and lemon juice until well blended.
3. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, cinnamon, cloves, ginger, nutmeg, and salt.
4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. If the dough is too sticky, add a little more flour.
5. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
6. Roll Out Dough: On a floured surface, roll out the dough to about 1/4 inch thickness
7.  Cut Out Cookies: Use hexagon-shaped cookie cutters to cut out shapes and place them on the prepared baking sheets to look like a honeycomb
8. Bake: Bake for 8-10 minutes or until the edges are just starting to brown.
9. Cool and Decorate: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Dust with powdered sugar to add some buzz. 
10. Enjoy your honey-infused Alby Christmas cookies with a warm cup of tea or coffee!
