I'm calling dinner "Capsicum Monoliths".
Using our #allotment capsicums, plus garlic, chilli, onion, eggplant, tomato, zucchini, parsley and basil — in a mix of quinoa and green lentils, small pieces of mild cheddar melted into it and mozzarella on top. All sat in a stabilising bed of rough skin-on potato smash. All of the vegetable content of this meal we grew ourselves. Enjoying this late season bounty whilst it lasts, we will be looking back wistfully upon these times soon enough.
